The farm Parco Fiorito, on the border between Umbria and Tuscany, just 6 km away from Cortona, is surrounded by forests, pastures and crops. Immersed in the Val d'Esse it consists of a Vineyard with Cellar, an Olive grove, a Breeding Sheep and Pigs and soon we will have a Cheese factory for local processing (km 0) of milk from our sheep.

Vineyard, Winery & Olive Grove

The Farm Parco Fiorito is located in one of the best areas for the cultivation of vines and olives, we produce high quality wine and extra virgin olive oil.

The total area of vineyards is 2 hectares, divided into two separate plots: the 'historic‘ vineyard and a new plant under construction. The density of plants per hectare is from 3,900 to 5,000 vines. The vineyards are espalier (Guyot) simple and partly spurred cordon.

The vines are present for the most part Sangiovese (84%), and in small part Merlot (8%) and Syrah (8%).

Our superior quality, organic wine is produced without the use of pesticides or sulfides; we use pheromone trap nests, cluster thinning, then we continue in the cellar with modern and innovative equipment. Finally, we complete the aging in barrels and French oak barrels in order to obtain a strong wine, spicy but round, delicate, fruity, pleasant and above all unmistakable.

From grapes grown in our vineyards we produce our wines in limited quantities. You can buy it in bottles of 0,75 l. We export to individuals.

We put great care in the management of our olive grove that spans 4 hectares with about 1000 plants and we produce varieties of olives typical of Tuscany, cultivars such as Leccino, Moraiolo, coreggiolo and crusher. The collection, done strictly by hand before they are completely ripe, allows us to produce a high quality oil.

Our extra virgin olive oil has a low acidity, a slightly spicy aftertaste and a lively fragrance. The balanced and harmonious flavor is the perfect condiment to enhance the flavors of your food.

You can buy it in bottles of 0,75 l or 3 and 5 liter cans, we export.

Pigs breeding

The Parco Fiorito farm overlooking a small Valdesse (Esse Valley from Esse River)), the edge of the woods and unspoiled nature. Here Claudia (enrolled ANAS - National Swine Breeders Association) has created the first semi-wild breeding of Cinta Senese pigs in this valley between Tuscany and Umbria.  We breed pigs of Cinta Senese, strictly in the wild.

The Cinta Senese is a breed of Tuscany, native pigs of Siena territory with ancient origins, with many historical and iconographic evidence from the Middle Ages, as evidenced in the most famous fresco representing “Il Buon Governo” by Ambrogio Lorenzetti, in the Siena town hall.

In Arezzo, nearby, you can enjoy a statue of a “Cinta Senese Pig”  in the portal of the Church Santa Maria della Pieve.

The woods that surround us are the ideal environment for breeding in the wild of the Cinta Senese, offering many natural nutrients that supplement the feeding of pigs.

The Cinta Senese pigs are black, and owe their name to the characteristic white stripe that completely encircles them in the height of the front legs. They have a form more shortened than the more common white pigs, a less developed thigh and ears that fall in forward, to protect the nose from thistles undergrowth in which they live.

This breed of pig has literally risked extinction after the war.

In the period of reconstruction and the economic boom it has favored the intensive rearing of more prolific breeds suited to the stable, economically more profitable. The Cinta calves less piglets, needs to live in the wild, and times of much slower growth: these are the reasons for which it was quickly replaced by other breeds of pigs and threatened to get lost.

Only in recent years it has been able to save thanks to the action of some passioned breeders (among whom we are proud to be) who reported on the table the extraordinary tastes of its meat.

The quality of the meat is, in fact, the main distinguishing feature of the Cinta Senese! The movement makes the muscles toned and well vascularized, and along with proper nutrition makes healthy animals and their precious flavor to the meat, naturally delicate yet savory, definitely to try to discover and fall in love with real flavors and perfumes.

Our work does not end with the breeding, we set up a small workshop for meat processing.

With modern equipment and drawing on the experience of tradition, we prepare special cure meats. We work the meat of our pigs with great care and without using any preservatives or chemical additives! The intent that drove us was to preserve the exceptional quality of the meat without “pollute" it with substances that modify the flavor (which may have suspected health effects of the consumer), just as we did at home, relying only to conservative quality of the rooms, the controlled environments in the processing and maturation phases, and with the action only mechanical of the vacuum process.

Thus it was born our line of business cure meats: "MADE WITH LOVE, SALT AND PEPPER." Short chain means shorten the path that leads from the first stages of a process to the use of the final consumer, and we have embraced this philosophy to be able to personally check the quality of all the production and manufacturing processes.

Our short chain means that we are able to bring the pig meat that we ourselves breed directly on your tables, in the form of “MADE WITH LOVE, SALT AND PEPPER" meats, or in the dishes we serve in our restaurant, in the form of sausages and meat cooked roasted, grilled or in sauce, thus ensuring maximum freshness, the highest quality offering our visitors and clients flavors and really unique fragrances.

Sheep farming

The breed “Apenninica", which for centuries grazing in the meadows of our hills, is a breed of quite rustic sheep, bred a time for the production of milk, meat and wool: it adapts to different environments with climate and soils are not easy, and today is bred for its meat in Tuscany, Umbria and many regions of the central-southern.

The breed has continued to be developed to improve the quantity and quality of the meat, crossing the Apenninica with Bergamasca, Fabrianese and others. We crossed with the english Suffolk to get a more decided muscle.

The size of this breed is medium-large; head, straight profile or slightly arched, is proportionate and no horns, medium long ears horizontal flow or slightly pendulous.

Production: the lambs at birth weigh about 4-5 kg, a month and a half of age arrive at 16-18 kg, after 100 days is about 26-30 kg. Adult males reach about 50 kg, females about 40 kg.

On our olive grove we graze about 60 sheep bred brady, moving between the different plots depending on weather conditions and pasture conditions. The peculiarity of our permanent pastures is that they are made up of very fragrant native species that, assimilated by the sheep in the pasture, determine the production of a milk rich in aromas, very appreciated for the production of cheeses with delicate flavors.
The power of our sheep is made predominantly from natural pasture, when grazing becomes scarce the daily ration is supplemented with alfalfa hay or hay fodder and clover which was produced on the farm and stored in the spring.
